Baked Sweet Potato Chips

Servings: 4

Vegetable oil spray
1 teaspoon dried rosemary
1 teaspoon dried parsley, crumbled
1/2 teaspoon dry mustard
1/4 teaspoon paprika
1/4 teaspoon salt
1/4 teaspoon pepper
2 medium unpeeled sweet potatoes (about 12 ounces)

1. Preheat oven to 450 degrees F. Lightly spray a baking
sheet with vegetable oil spray.
2. In a small bowl, combine seasoning ingredients.
3. Cut potatoes crosswise into 1/8-inch slices. Put
in a single layer on baking sheet. Spray tops with
vegetable oil spray. Sprinkle with seasoning mixture.
4. Bake for 25 minutes, or until tender-crisp.
