INGREDIENTS:
1/2 cup fruit sweetened fudge sauce
1 package unflavored gelatin
1/4 cup water
1/2 square unsweetened chocolate
2 tablespoons fruit sweetener (recipe to follow)
4 egg whites
1/4 teaspoon cream of tartar
Dash salt
2 teaspoon vanilla or rum flavoring
DIRECTIONS:
1. Place fudge sauce in medium bowl. Set aside.
2. Combine gelatin and water in small bowl until gelatin is dissolved.
On double boiler melt 1/2 square chocolate. Add dissolved gelatin and
fruit sweetener. Remove from heat. Beat with rubber spatula until mixture
is slightly cooled (2 minutes). Pour chocolate mixture into fudge sauce.
Mix thoroughly.
3. In separate bowl, combine egg whites, cream tartar, and salt. Beat
egg whites until peaks form. Beating at low speed, add spoonfuls of chocolate
mixture until completely blended. Add flavoring and spoon into 6 dessert
dishes. If desired sprinkle with chopped roasted almonds.

1 part frozen apple juice concentrate
+ 1 part granulated fructose.
Example: If recipe calls for 2/3 cup fruit sweetener; then combine 1/3
cup fruit juice concentrate with 1/3 cup granulated fructose.
