STRAWBERRY CREAM NESTS

Makes: 10 Nests (1 Serving = 1 Nest)

INGREDIENTS
3 egg whites
1 teaspoon cream of tartar
3 tablespoons fruit sweetener (recipe to follow)
1 teaspoon vanilla

DIRECTIONS
1. Beat egg whites and cream of tartar until thick. Slowly, add fruit sweetener and vanilla. Beat until stiff.
2. On cookie sheet that has been covered with brown paper, make 10 mounds. With spoon make each mound into a cup-like nest, approximately 4" in diameter.
3. Bake 45 minutes at 275 degrees F. Turn off oven. Leave nests in oven one more hour or overnight. Let dry before removing from paper.

Filling:
Slice 1-1/2 cups strawberries which have been drizzled with 3 tablespoons fruit sweetener. Spoon strawberries into nests. If desired, top with whipped cream which has been lightly sweetened with fruit sweetener (1/2 cup whipping cream (whipped)* + 1 tablespoon fruit sweetener). Fruit sweetened, strawberry or French vanilla ice cream can also be used. Top with one whole strawberry. Blueberries, blackberries, or peaches also work well as a substitute for strawberries.

FRUIT SWEETENER RECIPE

1 part frozen apple juice concentrate + 1 part granulated fructose.
Example: If recipe calls for 2/3 cup fruit sweetener; then combine 1/3 cup fruit juice concentrate with 1/3 cup granulated fructose.
